The Sakimaru is a specialized Japanese knife designed for preparing sashimi and sushi. The mostly straight spine paired with the slightly curved edge make it well suited for long un-interrupted slices of fish and soft proteins. The weight of the blade is designed to help the edge fall through the cut for a smooth cut and the katana-like tip prevents accidental scoring or puncturing of the protein.
Constructed in the traditional Kata-Ha lamination, this blade combines an extra hard 52100 cutting edge with a thicker body forged from 1800's wrought iron. This lamination of steel is beautifully suited for this application, although it does make many forging and hardening processes much more time consuming to get right.
The blade is ground with the traditional right handed chisel geometry. The backside of the blade has a large hollow grind to reduce surface contact and prevent food sticking.
The handle has been shaped out of double-dyed and stabilized box elder burl for a striking maroon and teal-green, paired with teal trustone and a black carbon fiber bolster. The extra length to the handle is meant to balance the length of the blade for a perfect feel in the hand
