Forged from AEB-L Stainless Steel, this hefty cleaver is built for all your butchery needs.
AEB-L stainless steel is best described as a stainless version of 52100-bearing steel. This alloy offers some of the finest, most evenly distributed carbide structure available, making for a razor-sharp edge that can also be maintained on quality whetstones.
The edge geometry is precisely what you want in a cleaver. A beautifully thick, convexed edge allows food to release as you cut, as does the hand-rubbed satin finish.. The generous weight of this knife makes breaking down large cuts easy.
This blade has been embellished with deep engraving of an intertwined knotwork
The handle is constructed from Sonoran Ironwood, a dense, hardwearing wood with deep golden hues and incredible feel in the hand. The handle is shaped with generous proportions to fill the hand and provide a secure grip. The brass bolser adds weight right in the hand and is embellished with knotwork engravings on the front face.
