Carbon Kiritsuke - Purpleheart and Wenge

Forged from 1095 alloy steel, this kiritsuke is ready to tackle nearly every task in the kitchen. 1095 steel is extremely durable and one of our favorite steels for its balance of sharpness, toughness, and hardness.

This knife is ground with a beautifully thin edge, making it excellent for cutting and slicing. The gently sloping spine makes the tip needle-sharp and easy to index in the hand, while the gently curving edge creates a beautiful rocking blade for mincing.

A brushed satin finish excels at maintaining its appearance and food release even after years of use. The carbon steel will develop a bluish-grey patina over time, protecting it from rust and corrosion.

The octagonal Wa style handle is shaped from purpleheart and stabilized wenge, with a copper and marble trustone spacer.
