Forged from a san mai of 154 CM and 304 stainless steel. This provides a keen edge with a hardness of approximately 62 Rockwell, with added toughness from the non-hardening cladding. Both steels are well known for their corrosion resistance.
The bunka is a well-rounded Japanese culinary knife, well-suited to cutting meats, fish, and vegetables. The pointed tip lends itself to precise cutting, while the gently curved edge allows quick rocking motions.
This knife is ground with a beautifully thin edge, with a significant hollow grind in the upper half of the blade. This greatly reduces weight and surface contact area, while keeping a stiff spine in place.
A bead blasted finish excels at maintaining its appearance and food release even after years of use.
The bolster section of this blade has been embellished with a laser engraved scales motif.
The handle is shaped from blue dyed and stabilized box elder burl, with a peened copper spacer.
