AEB-L stainless steel is best described as a stainless version of 52100-bearing steel. This alloy offers some of the finest, most evenly distributed carbide structure available, making for a razor-sharp edge that can also be maintained on quality whetstones
The edge geometry is precisely what you want in a boning knife. A thin cross-section with a beautifully convexed edge allows food to release as you cut, as does the hand-rubbed satin finish. The needle sharp tip makes quick work of separating fine joints with ease. The upswept nature of the edge makes the slicing work extra smooth and clean
The handle is built in a frame construction from carbon fiber pieces cast in crystal clear epoxy.
