The Cai Dao is a style of Chinese cleaver, an all-purpose, rectangular-bladed kitchen knife popular in Chinese cuisine for its versatility in slicing, mincing, and chopping boneless meats and vegetables. It should not be confused with a heavy Western-style meat cleaver, as the cai dao has a much thinner and lighter blade designed for finesse rather than cutting through heavy bones.
This cleaver combines cleanly etched damascus bevels paired with forged flats and blade body. The extra tall and thin blade is a tricky forging, as extra care must be taken to keep all parts of the blade in alignment.
The frame construction handle has been built from gaboon ebony and paduk, with a grey richlite frame. These materials present a bold contrast, as well as a comfortable weight in the hand.
